Lentils are widely used as a meat substitute and contain allergens that can cause sensitization in children and adults.

Lentils contain allergens Len c1 and Len c2, which cause allergic reactions, especially in children with food allergies in the Mediterranean region and Asian communities. Consumption of lentils can lead to sensitization, so diagnosing allergy is important for proper treatment. Lentils are a source of protein, minerals, and vitamins but require heat treatment to eliminate toxins.
