Jug r1 is a heat-stable protein from the 2S albumin family, which is the main allergenic component of walnut and pecan nuts. It is resistant to digestion and the acidic environment of the gastrointestinal tract, allowing it to penetrate the intestinal mucosa and trigger immune reactions. Sensitization to Jug r1 is associated with a high risk of systemic allergic reactions, including anaphylaxis. This protein is an important marker for diagnosing walnut allergy and assessing disease severity.

- Diagnosis of allergic reactions to walnut.
