Parsley is a herbaceous plant from the Apiaceae family, widely used in cooking. Allergic reactions to parsley are rare but can manifest as urticaria, angioedema, contact dermatitis, and anaphylaxis after ingestion or skin contact. The main allergenic component is a low-molecular-weight lipid transfer protein of 12 kDa (Pet c3), which may cause cross-reactivity with allergenic components of peach (Pru p3) and birch pollen (Bet v1).
