The test determines sensitization to a mixture of meat allergens. The analysis allows detection of allergic reactions to major types of meat and assessment of allergy risk.
Pork, beef, and chicken meat contain specific allergens that can cause sensitization and allergic reactions. The main allergenic components of pork are serum albumin Sus s1 and galactose-α-1,3-galactose (α-Gal), which can trigger allergy. In beef, important allergens include serum albumins (Bos d6, Bos d7) and myosin protein (Bos d13), which cause cross-reactions with milk proteins. Chicken meat contains allergenic components Gal d5, Gal d7, Gal d8, responsible for allergic reactions to poultry and may cause cross-reactivity with other bird species and fish. This test helps identify specific sensitization, which is important for allergy diagnosis and treatment.
