Lamb refers to animals under one year old; mutton is meat from animals older than one year. Beef and mutton share common allergens, and cross-sensitization with sheep wool is also possible. Mutton is considered a weak allergen, and its allergenicity decreases with heating and pepsin treatment. This test aids in selecting safe foods and managing allergic conditions.
